Inga Lam surprise surprise, i have a video for yall coming tomorrow! know i've been talking about this bulk storage freezer meal prep idea for a while, and now it's FINALLY done. this batch lasted me quite a while, which is saying a lot because most of these meals i'm making are some of favorite ones. a lot of comfort dishes, as always, but just because it's comfort doesn't mean it's not health!!! side note: i feel like if we pair this with the costco storage video, we could probably survive the apocalypse for a while.... Perfect but I have one advice : cut the vegetables a day before, put some salt on it, spread them on the largest surface you can, and put them in the fridge overnight without lid. The fridge and salt will extract the water so the flavors are more concentrated and the final result is less soaky and more crispy.

Ratatouille was one of the most iconic Pixar movies. I can't believe how gorgeous and how similar this dish looks compared to the movie. Remy would be proud!
